- 1 cup (227g) butter
- 1 cup (200g) granulated sugar
- 1/4 cup (60g) sour cream
- 1 egg
- 1 teaspoon vanilla extract
- 2 1/2 cups gluten-free flour blend (e.g., Bob’s Red Mill Gluten Free 1-to-1 Baking Flour)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the mixture, mixing well to combine.
- In a separate bowl, whisk together the gluten-free flour blend, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
- Cover the dough and chill in the refrigerator for at least 1 hour, or up to 2 days.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop the chilled dough onto the prepared baking sheets, spacing them adequately to allow for spreading.
- Bake for approximately 8 minutes, or until the edges are lightly golden.
- Remove from the oven and allow the cookies to cool on the baking sheets before transferring to a wire rack to cool completely.
Notes
Dough Chilling: Chilling the dough for at least 1 hour helps prevent the cookies from spreading too much while baking. For best results, chill overnight.
Flour Choice: A gluten-free 1-to-1 baking flour blend works best. Avoid blends that lack xanthan gum unless you add it separately.
Texture Adjustment: If the dough is too dry, add 1-2 teaspoons of milk to achieve a smooth consistency. If too sticky, add a bit more flour until it holds together.
Baking Time Variations: Ovens may vary, so start checking at 7 minutes. Cookies should be slightly golden at the edges but remain soft in the center.
Storage: Store in an airtight container at room temperature for up to 5 days. For longer storage, freeze the cookies for up to 3 months.
Frosting & Decorations: These cookies are great for decorating with royal icing, buttercream, or sprinkles. Let them cool completely before applying any frosting.
