  • 1/4 cup (60g) sour cream
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups gluten-free flour blend (e.g., Bob’s Red Mill Gluten Free 1-to-1 Baking Flour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  • In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract to the mixture, mixing well to combine.
  • In a separate bowl, whisk together the gluten-free flour blend, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
  • Cover the dough and chill in the refrigerator for at least 1 hour, or up to 2 days.
  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Scoop the chilled dough onto the prepared baking sheets, spacing them adequately to allow for spreading.
  • Bake for approximately 8 minutes, or until the edges are lightly golden.
  • Remove from the oven and allow the cookies to cool on the baking sheets before transferring to a wire rack to cool completely.

Notes

Dough Chilling: Chilling the dough for at least 1 hour helps prevent the cookies from spreading too much while baking. For best results, chill overnight.

Flour Choice: A gluten-free 1-to-1 baking flour blend works best. Avoid blends that lack xanthan gum unless you add it separately.

Texture Adjustment: If the dough is too dry, add 1-2 teaspoons of milk to achieve a smooth consistency. If too sticky, add a bit more flour until it holds together.
